Growing up with parents who owned an Asian restaurant for over 25 years, stir fry was practically a food group. Fresh, simple, and quick, these one pan (or wok) meals are sure to be a hit. Use whatever vegetables that are in your ice box to personalize your stir fry. Or easiest still, buy a frozen bag of Stir-Fry vegetables usually found in your frozen foods section of your local market. Japanese eggplant, asparagus, zucchini, and bok choy also work well in this delicious dish
Serves: 4-5
Ingredients:
2 tbsp coconut oil
2 lbs chicken breast (diced into one inch pieces)
2 cups broccoli florets
2 cups mushrooms (halved)
1 red pepper( cores, seeded, and sliced in strips)
2 carrots sliced
1 Tbsp minced ginger
1 Tbsp minced garlic
1/4 tsp red pepper flakes
1 1/2 tbsp arrowroot
2/3 cup coconut aminos
1/2 cup chicken broth
Combine coconut aminos, and arrowroot in a small bowl; stir until smooth. Mix ginger, garlic, and red pepper into sauce; coat chicken with marinade and refrigerate for at least 1 hour.
Heat 1 tablespoon coconut oil in a large skillet over medium-high heat. Cook and stir bell pepper, broccoli, mushrooms and carrots until just tender, about 5 minutes. Remove vegetables from pan and set aside
Remove chicken from marinade, reserving liquid. Heat 1 tablespoon coconut oil in skillet over medium-high heat. Cook and stir chicken until slightly pink on the inside, about 2 minutes per side; return vegetables and reserved marinade to pan and add the chicken broth. Bring to a boil; cook and stir until chicken is no longer pink in the middle and vegetables are tender, 5 to 7 minutes.

The strict rules of Whole30 say that you need to do it for thirty entire days. Not 29 days. Not 28 days. Not 5 days during the work week followed by an extra large pizza on the weekend.
In other words, don’t go into your Whole30 with the intention of cheating at your mom’s birthday dinner on the 20th day. Remember, you are strong enough to last the entire 30 days without “accidentally” demolishing a pile of birthday cake. Bring some fruit to the party and politely decline your slice. You don’t owe anyone an explanation for your own personal eating habits.
